A seldom seen distillery, even in Indie bottlings as it’s a main component in the Diageo blends like Johnnie Walker. Strathmill has a purifier on the still body which help to make the spirit very light and sweet from the get go. It tends to rely quite heavily on the cask to bring character, so in this case a solid in 23 years in a single Sherry butt has done the trick. A seriously delicious dessert dram.
Nose: Baked pears and earthen floor dunnage funk. After some time, bread and butter pudding and dark chocolate coated cherry liqueurs.
Palate: Prunes and rum and raisin ice-cream coat the palate, while notes of cinnamon and burnt caramel burst through on the mid palate. Finally, a touch of wine gums and peach tarte tatin.
Finish: Aniseed humbugs and hot cross buns.
Hart Brothers can trace their origins in the licensed trade back to the late 19th century when the family were licensed victuallers and publicans in Paisley, the mill town on the outskirts of Glasgow. It was not until 1964 that brothers Iain & Donald Hart incorporated the company as Wine & Spirit Wholesalers and Scotch Whisky Blenders. Alistair Hart joined the company in 1975 and it was his responsibility as chief blender to source vintage casks of single malt whisky that were not readily available through any specialist whisky shop or online whisky site.
