Melbourne is synonymous with the aroma of roasting coffee, so when we sat down to the second round of cask samples for our 2024 SMWS collaboration bottling and were hit by this very tasting note, the whisky was immediately shortlisted. The tasting notes that followed, particularly after adding water, were some of the most complex yet delicately balanced that we’ve seen in recent times. This whisky was selected for the daily whisky drinker looking for something fun, with depth, that can be savoured in any climate, and we hope you can find the right moment to savour it!
We’re proud to introduce 39.289 Maple-Mustard Pulled Pork by The Scotch Malt Whisky Society and selected by the team at Whisky & Alement. Matured for 13 years in ex-Bourbon wood before seeing extra maturation in a custom-made 1st fill Spanish oak Oloroso hogshead for four more years and bottled the cask strength of 58.2%.

Tasting Notes
Nose – Oh the toasty oak, smell of roasting coffee wafting through the air on a cool Melbourne morning, juicy flamed slightly burnt orange, waffle cones, tarbolic soap, anise, freezer apple pies, Cadbury Roses orange cream, nearly burnt caramel, raw cacao bean, Violin rosin, dark chocolate coated freeze dried raspberries, passionfruit soda, feijoa, caramel sauce, maple syrup candied bacon, tung nut oil and Dr Pepper.
Palate – That toasty oak just keeps on giving, Cadbury Roses orange cream, dry red fruit, cranberry, goji, a beautiful fullness of spirit, clove numbness, anise, crushed black pepper, apricot tagine, brown creaming soda, orange Fanta spider, … and more of that toasty biscuity oak character!
Finish – A tidy finish of lemon oil, violin rosin and canola oil.
With a dash of water – We found that water only enhanced the whisky and it’s toasty oak, with notes of vanilla wafer biscuits, Tunnocks, maple syrup, baked green apples, hessian, glass toffee, pear tarte tatin and fruit loaf on the nose; and more biscuit, liquorice strap, burnt pears, digestive biscuits and a more syrupy texture on the palate.
