The beast of Dufftown! The richest yet most refined malt of them all. But what does this mean to the drinker? Morltach has a very special distillation regime distilling 2.51 times as opposed to the widely used 2 times. The shape of its stills would generally make for a heavier spirit but because of this extra .51 times distilling, some of the rough notes has been polished down by the stills. Mortlach lends itself to both Sherry and ex-bourbon casks, excelling in nuanced malty sweetness and thick, smooth mouthfeel.
Nose: Flakey Vanilla slice with pink icing and powdered sugar. Uncooked Christmas cake left to rise and extra old Brandy.
Finish: Dukkha and sultanas.
Founded by Fabio Rossi, the grandson of the Venetian edible oil and wine merchant Giuseppi Rossi, Wilson & Morgan have earned their place in whisky fame. Following the golden rule, “Trust your palate and your instincts”, Wilson & Morgan have had the opportunity to bottle some wildly rare casks from some of Scotlands more elusive distilleries, including Port Ellen, Brora and Macallan. Fabio Rossi was also instrumental in the use of Sicilian Marsala wine casks in finishing whisky. In 2002 he bottled a Longmorn, finished in Marsala casks, which he then presented to author Michael Jackson, who dubbed Fabio as “The Tailor of Whisky”.
