From the “Classic version” of Hidden Spirits Independent bottling range, these bottlings are diluted slightly with water from their natural cask strength to give the optimal drinking experience.
Aultmore is a feature malt in the Dewar’s blend having such a vibrant and fruity nose there is much to discover on the nose. Running a lower temperature and intensity distillation keeps reflux high in the still while creating intoxicating fruit aromas.
Nose: The 1st fill ex-bourbon has certainly worked its magic. Milk bottle lollies and jersey caramels on the nose bread dough and toasty oak. Dried apricots and popcorn.
Palate: Very juicy flavours up front. Apricot nectar and bubblegum, pineapple juice and muesli bar yoghurt. The toasted oak character is a perfect demonstration of the 1st fill ex-bourbon cask. This is a benchmark for an Aultmore.
Finish: Despite being an oak forward whisky, it’s never in your face. There’s no dryness on the finish or brassy char characters which can sometimes arise. Flavours of new pencils, rye crackers and caramel coated cashew nuts.
